A fancy yet simple version of apple pie. This version was conceived in a Montreal hotel room (with a full kitchen, nonetheless) after being inspired by all the apples at the Marche Jean-Talon. I hope you enjoy this! Why not try adding some raisins, dried cranberries, or even some almonds to the mix. Serve warm with a scoop of good quality vanilla ice cream.Ingredients | Galette De Rois Dessin1 sheet puff pastry, rolled to 1/8-inch thickness4 baking apples - peeled, cored, and cut into 1/3-inch thick slices1 tablespoon freshly squeezed lemon juice⅓ cup superfine sugar2 tablespoons cornstarch1 teaspoon ground cinnamon¼ teaspoon ground nutmeg⅛ teaspoon ground cloves1 egg, well beatenDirectionsPreheat oven to 400 degrees F (200 degrees C).Lay puff pastry onto a round pizza pan.Mix apples and lemon juice together in a bowl until evenly coated; add sugar, cornstarch, cinnamon, nutmeg, and cloves. Toss to evenly coat apples. Spread apple mixture into the center of the puff pastry and fold edges of pastry toward the center. Brush the folded pastry edges with about 1/2 the egg.Refrigerate pastry-apple mixture for flavors and pastry to settle, about 10 minutes. Brush pastry with remaining 1/2 egg.Place pan on the top rack of preheated oven and bake for 20 minutes. Give galette a 1/4 turn and lower heat to 350 degrees F (175 degrees C). Continue baking until pastry is lightly browned, 8 to 10 minutes. Cool slightly before serving, about 10 minutes.These days, you'll probably find a few kinds of find frozen puff pastry available in the grocery store. I tested this recipe with President's Choice(R) Butter Puff Pastry. It is probably the best one you can get, since it contains real butter, whereas some don't. It also comes already rolled out, which is very convenient. I highly recommend using this product. However, if you can't find a brand that's already rolled out, just roll out the standard sized square of puff pastry out to 1/8-inch and you'll be just fine!As for the apples, I recommend using a baking apple, such as Idared, Cortland, or Spartan. All of these have produced excellent results. Avoid apples such as Red Delicious, as they are not the best for baking.
